  <b class="grey">Ingredients</b><br />
  12 West Coast fillets<br />
  4 tablespoons olive oil<br />
  Juice and zest of ½ lemon<br />
  1 garlic clove<br />
  Salt and pepper<br />
  4 never rukkola<br />
  1 handful of cherry tomatoes, preferably red and yellow<br />
  1 Fistful of olives<br />
  1 cup peppers into strips<br />
  Fresh basil</p>
<p class="col2"><b class="grey">Procedure</b><br />
Add West Coast fillets in a strainer so that the liquid flows from. Cut the fillets into pieces.<br />
Whisk together olive oil and lemon. Press the garlic to season with salt and pepper. Turn the herring pieces and let marinate for 10 minutes.<br />
Spread rukkola, cherry tomatoes, olives and peppers on four plates and place the herring pieces. Garnish with basil and serve. </p>

<p><b class="grey">TIPS:</b><br />
Take the West Coast fillets and let the liquid drain from a sieve. Make a cream based sauce with dill, eggs or other spices you like. Cut the west coast of the fillets into pieces and turn them in good gravy. A quick and tasty variation that you can change the flavors of the infinite.</p>

  6 West Coast fillets<br />
  2 boiled, cold potatoes <br />
  2 cup pickled beets<br />
  1 whole pickled cucumber<br />
  1 apple<br />
  1 shallot<br />
  Mustard sauce:<br />
  1 tablespoons sweet mustard<br />
  1 tablespoons sugar<br />
  2 tablespoons cider vinegar<br />
  1 cup oil</p>
<p class="col2"><b class="grey">Procedure</b><br />
Cut herring, potatoes, beets, pickles, apple and onion into equal sized cubes. <br />
Stir together mustard, sugar and vinegar in a bowl. Beat in the oil in a steady stream until the sauce is thick. Season with salt and pepper.<br />
Fold in cubes in the sauce and set the cold for a while before serving.</p>

<p><b class="grey">TIPS:</b><br />
Instead of mustard sauce, you can use whipped cream flavored with chopped parsley and horseradish. Herring salad can be served as appetizer with boiled eggs, salad and good bread.</p>

Take up the herring fillets and put a bit of special sauce to run from. <br />
Mix together oil and vinegar in a bowl and season with salt and pepper. Turn the potatoes, apples, red onions, radishes and capers.<br />
Serve potato salad and herring on four plates and sprinkle with chives, serve.</p>

<p><b class="grey">TIPS:</b><br />
Fillets can also be cut up into pieces and turned along with potato salad. Serve with a mild mustard sauce.</p>
