Potato salad with apple, capers and West Coast fillet

Ingredients
12 West Coast fillets
4 tablespoons mild canola oil
2-3 tablespoons cider vinegar
Salt and pepper
600 g boiled new potatoes, sliced
1 green apple, diced
1 red onion, sliced
6 radishes, sliced
2 tablespoons capers
2 tablespoons chopped chives

Procedure
Take up the herring fillets and put a bit of special sauce to run from.
Mix together oil and vinegar in a bowl and season with salt and pepper. Turn the potatoes, apples, red onions, radishes and capers.
Serve potato salad and herring on four plates and sprinkle with chives, serve.

TIPS:
Fillets can also be cut up into pieces and turned along with potato salad. Serve with a mild mustard sauce.
